Recipes

Here are a couple of the recipes I'm trying this week:
Low Fat Tater Tot Casserole in the Crock pot
1 lb 95% ground beef
32 oz tater tots
1/2 tea salt
1/4 tea pepper
1 can healthy request cream of mushroom soup
1 tb dried onion( I will use real onion and probably 1/2 cup)
1/4 C milk
1/2 C Shredded Chedder Cheese for the top
Brown hamb and onions, drain, line crockpot with Tots, combine all other ingredients and pour micture over the Tots.
I make this in the oven normally and I also add a can of green beans Optional.
Cover cook on high for 3 hours last half hour add cheese to melt!! Enjoy
Crockpot Chicken Cordon Bleu
6 boneless chicken breast (I used about 13 chicken tenders and it worked perfect)
1 can cream of chicken soup
1 c milk
6 slices of ham
6 slices of swiss cheese
1 pkg of stuffing mix(stove-top)
1/4 c melted butter
1-In a small bowl, mix together the soup and milk. coat the bottom of the crock pot with mixture
2-Lay chicken pieces on the bottom of crock. cover with ham and then swiss cheese. pour remaining soup/milk mixture over the chicken.
3-sprinkle the stuffing mix on top, and drizzle with melted butter.
Cook on low for 4-6 hrs or hih for 2-3
I have already tried this one, My husband loved it and so did my guest!! Its a keeper recipe and so simple. Enjoy!!

Menu Planning

Im trying to be more organized in our lifes lately!! Ive been working on menu planning for the couple of weeks and It is amazing how nice it is to come home and know what you are going to make or have the dinner in the crockpot. So her are my main dinners for the week. We arent really home for breakfast so we just grab something or have cereal.
Mon- Ribs in the crockpot, Salad and baked potatoes
Tue- Tuna Noodle casserole also in the crockpot, salad
Wed-leftovers night ( football game so we never get home early)
Thurs- Chicken Cordonblue (crockpot) Yummy, Green beans, Garlic bread
Friday- Tater Tot Casserole(crockpot)
Sat & Sun- We usually go with whatever is left. Im going to try and do homemade Chili and cornbread for the weekend!!

Our new puppy "Piston"

This is our newest edition!! He is a Corgi, he is now 3 months old. I have always wanted one and found a breeder through my work. A wonderful family who we are so glad we met. We originally had the brother of this one picked out, but he suddenly got sick about 3 weeks before we were bringing him home and ended up having a heart defect and they had to put him to sleep. We were devasted!! We had already went and spent alot of time with him so we had bonded. Well, anyway there was one puppy left out of 6. We kind felt it was a sign so, we went and visited him and he was so sweet and we decided it was the right thing to take him. So Aidyn named him "Piston Cup" after the "Cars" movie!!
He is so much fun and Magnum our Lab and him just love each other. Aidyn loves him too and says that its his brother. It is the cutest thing. Piston is a wonderful edition to our family!!

Aidyns first day of preschool!!

Well, course these are backwards. I have the worst time with this blogging. This is a pic of him in his new class in the little bathroom. I couldnt help myself he looked so cute!

This one is of him when we were getting ready to leave I love him cute little face. He is so handsome.
He thought he needed to ride his bike before attending school!!



He is standing infront of the door at school. Not looking very excited now!! He was a little scared!!

Summer

Sorry this is so out of order I guesss I havent figured out how to do it right when I add pics it messes every thing up.
Anyway this last weekend Jon was given tickets to a West Coast Nascar race so we took Aidyn on Saturday he loved it he loves cars so he had a great time in the pits with all the cool cars and looking at them.


About a month ago we made a very hard decision we decided we had to put our dog Lacy down, she was almost 18years old. She couldnt see or barely hear and it was sad we couldnt handle watching her like that anymore so we let her go!! It was so hard she has been with us our whole married live together. She was our first kid!! We miss her so much!!

We got Aidyn a swimming pool for the back yard!! He absolutely loves to be in the water he is only 3 and thinks he can swim all by himself its great but scary also!





The summer is flying by we have only went camping once, which for us is weird we usually go every other weekend. We went over the 4th of July to Waterloo we had a great time. The weather was nice and it was a relaxing weekend. i thought I had some pics from camping but can seem to find them.

Aidyn's 3rd Birthday

All he wanted was a cake for his b-day!!


He got a really cool sprinkler from his Aunt Eva & Uncle Craig!

He loves the sand and water table he got from his Aunts and Uncles!! Thank you!



This is his cool bike he got from Dad and Mom!! This thing is a beast it can hold 300lbs!!

He had a great birthday party with all him family and friends that could come!!

Just Talking!!

Seems like we have had a lot going on lately. Jon is still out of work which really stinks! He is going crazy, but he does enjoy being home with Aidyn. My neice and Nephew Shyann and Wyatt started indoor soccer so that is 4 days a week we have managed to go to most of them. I enjoy going and supporting them and see how much they have improved from year to year. Especially Shyann she is going so great, Im very proud of her.

We had a very nice Easter! It turned out to be a great day. We had our Easter dinner with my family on Saturday so we could all be together it was a lot of food and visiting! The kids all had a great time finding eggs and playing out side all day. Thank you Jesus for a beautiful day.

Sunday we went to the Egg hunt at the park with our friends Rodney and Karrie and Tevyn, Cheyanne, Mckenna. The kids had a great time finding eggs and then playing at the park.

I am so thankful for many things in our life right now. Its hard with our financial situation, but I know that we are blessed to have each other, great friends and wonderful family.

We have a roof over our heads and we dont go without food!!, (we could go without some haha!)
Im grateful to have a great job that I do enjoy. WE are all healthy and love each other!!

Pirate Stew

So I was home from work this morning and thought I would make something in the crockpot, which I always intend to do and dont. Anyway Jon and I together found this recipe and it turned out amazing so I thought I would share it.

Pirate Stew-
3/4 c sliced onion
1 lb ground beef
1/4 c uncooked, long grain rice
3 c diced raw potatoes
1 c diced celery
2 cups canned kidney beans, drained
1 tsp pepper
1/8 tsp salt
1/4 tea chili powder
1/4 tea worcestershire sauce
1 c tomato sauce
1/2 c water
1. brown onion and hamb together, drain
2.Layer ingredients in slow cooker in the order given.
3. Cover, coook on low for 6 hours or until potatoes and rice are cooked.

We did also add carrots 2 cups between the potatoes and celery, I also added more worcestershire sauce(cause I love it) so I probably added maybe 1/4 c, and seasoned it to my own taste.
One thing you might add more of is rice we couldnt really tell it was there.
Also we added about a cup more water that it called for.

I havent been on hear in a while! I signed up for facebook and thats all Ive been doing!

I thought I would post a couple pics of Aidyn helping me cook. He loves to cook no matter what I'm doing in the kitchen he wants to help! He is so serious about it and thinks he is so big. It takes a lot of patience for me to let him. We are making chocolate pudding in this one.
He usually helps me with the scrambled eggs and loves to crack the eggs which he doesn't understand that you dont just squeeze them!!!

Finale Adoption Paperwork!

So Yesterday was a pretty important day for us! We met with the lawyer to sign all the final paper work for Aidyn's adoption. We are changing his name so we had to do that paperwork and a couple other forms and that was it! Now we just have to wait for the judge to finalize it all and he will legally be ours!!! We are so excited! Hopefully by the end of the month it will be done!

New Years Eve

We went to my sisters house for New Years Eve, We had alot of fun visiting, eating some great food! And a really fun game of Pictionary! It was so fun, Im usually not a pictionary kinda of girl, cause I generally dont like to draw. But we had a large dry eraser board and it was guys against girls and we just had a blast!
I realized when we were done none of us had taken one picture of the whole evening! I was so mad! So sorry I have no proof that Im a horrible drawer!
